I think that you need to be romantic and make your proposal very special.  I believe that it should be meaningful  and a surprise.  I believe that it should be a special moment for the two of you.  So think real hard and surprise her and make that special moment one that the two of you will always remember. Don't do a holiday!!  I think that the engagement should get its own special day personally.  I know I will always remember April 12th as the day we got engaged.  :-)

Ask her the day before you leave.  She will be so happy and I guarantee you will have the best holiday ever !!!!

I think it's better when it's not planned. bring the ring with you wherever you go and when the feeling is right... go for it.  I think simple is better.
