Well, if you're going to marry him, a major thing about his personality is that he's kinda hyper. Also, the child you have with him is hyper, too. He loves spinach and top- quality mayonnaise... but I'm sure he likes spinach better. Something you should look at in the game is the resident list in the town hall. It gives you an idea of the resident's personalities. You can find it on the counter-top. Oh! And check the booklet inside your game case. Flip towards the end of the booklet, and you'll find a list of bachelors/bachelorettes. You can read their descriptions there, too.
