Most of the Central American countries won't allow a non resident to legally work unless he has a skill/trade that a local cannot supply.  So you need to decide if your degree is something that would be in demand, or obtain a residency which can take years, or, work at one of the above mentioned jobs illegally.  You can start a business of your own, but that usually involves a lot of cash and a lot more paperwork.

You can get just about any job where English is required, but you would have to work "under the table."

There are lots of opportunities to teach English, if that's of interest to you.

Some other ideas would be to get a job at a US Embassy (assuming you are from the US). There are web pages for each embassy in each country. On the websites you will find job postings.

Check into working with USAid or the UN (United Nations). Organizations like these can't always hire locals for every position. They will do what is necessary to get you the proper work visa or residence visa.

There are many, many organizations that aren't part of the government that provide help and aid to the locals in each country. Some of them have paid positions.

Depending on the country you are interested in and what your degree is in would depend on whether or not you could get a work visa and work in a local company. It's definately not out of the question, though.
