Growing avocados...inedible?

Question

I want to start growing an avocado tree from the stone i got in an avocado. I read up on how to start growing the pit, the method where you suspend the avocado stone half submerged in water until it sprouts and grows a bit. However, I read that a tree grown from this method will produce inedible fruit? WHY???

I'm pretty sure that if you can get it to fruit, it will be perfectly edible.
